Why is particle size important?
Did you know that the smaller the particles, the easier they are to distribute and dissolve? Borregaard offer milled versions of our EuroVanillin Supreme and EuroVanillin Regular, called Supreme FM and Regular M. The milling process reduces the vanillin's particle size and increases the surface area. The small particles dissolve more easily than crystals. In the video above you can see the noticable difference in solubility between the milled and crystal grade vanillin.
In addition to increased solubility Supreme FM and Regular M are also ideal choices for powder applications such as dry mixes, where they contribute to a more homogenous mixture and consistant flavour profile. For chocolate applications Supreme FM and Regular M can help reduce the conching time beacause of the more even particle distribution they provide.
